No-Bake Energy Bites

After cancer, I guess you could say I turned over a new leaf regarding nutrition. I wouldn’t call myself unhealthy pre-diagnosis by any means, but like anyone, there was certainly room for improvement. So after my eye-opening cancer experience, I tweaked my diet to include more all-natural and organic, as well as plant-based, ingredients. I also rid my pantry and fridge of as many processed foods as possible. Now when I need something dessert-like, I don’t make a pit stop at the grocery store to pick up something ready-made, but instead, I reach for better ingredients and make my own.

Allow me to introduce you to No-Bake Energy Bites! When my sweet tooth nags at me, these little numbers satisfy my cravings. While there are a million different versions of this tasty treat on the internet, this specific one was given to me by a friend. After an appetite-inducing workout, she handed me one of these homemade energy balls, and the rest is history. Every Sunday, during my food prep, I make enough to last for the week. I grab 2 or 3 per day, and it really takes the edge off! Beware, though, because better ingredients do not necessarily mean low-cal! Believe me, it’s easy to eat this whole stash, so you’ll have to access your willpower!

No-Bake Energy Bites:

– 1 c. dry oatmeal
– ⅔ c. coconut flakes
– ½ c. peanut butter
– ½ c. ground flax seed
– ½ c. chocolate chips
– ⅓ c. honey or agave nectar
– 1 tsp. vanilla extract

In a medium to large bowl, mix ingredients. Allow 30 minutes to chill in the fridge before rolling into bite-sized balls. This recipe should make 20 servings.

76 cal/ 4g fat/ 8g carbs/ 5g sugar/ 2g protein
